Cooking is my meditation, another way to give to people and a serious obsession of mine. Perfect roast chicken…one of the simplest and most frequently asked for dishes I make. I really only make this for people I love, it’s just that good. And I guess that means I love you. Here YA go!


1 whole 5-6 pound organic chicken (if possible)
white wine
olive oil
fresh rosemary sprigs
fresh arugula or kale
salt & pepper

Preheat the oven to 400.
Rub the inside and outside with olive oil, salt and pepper, place a pat of butter, a lemon slice and a sprig of rosemary under the skin of each breast, stuff the cavity with lemon and quartered onions
Roast chicken for 90 or so minutes, remove chicken to cutting board and let cool slightly. In the meantime, reduce the pan juices with white wine, butter, salt and pepper, slowly stir in the arugula or kale until wilted. Slice the roasted chicken and set on top of the greens.
